On the other hand, a sparkling wine such as Casillero del Diablo Devil’s Collection Brut equals its acidity and underlines the particular aromas of the cheese, especially if it is based on Chardonnay, as it provides creamy and slightly toasted notes, which recall and reveal the fresh side of this category of cheeses.
